The Leaf

Terroir in every vein.

Magahi · Desi · Calcutta

We source only Magahi paan from Nawada, Bihar — the same leaf that emperors once demanded for their courts. Its surface is waxy, its flavour faintly peppery and cool, with a finish that lingers the way good monsoon air does on a warm afternoon. Before a single filling is added, the leaf is already the point.

The Base

Chalk, earth, and the colour of dusk.

Chuna · Katha · The Foundation

Slaked lime — chuna — is applied with a single stroke of a wooden spatula, thin as paper. Then katha, the dark acacia extract, is brushed over it in one fluid motion. The two together create the chemical reaction that releases the leaf's alkaloids, turns lips red, and tells your mouth something important is about to happen.

The Sweet

Rose jam, coconut, and the memory of celebration.

Gulkand · Tutti-Frutti · Silver Vark

Gulkand — sun-aged rose petal preserve — goes in next. Sweet, floral, impossibly fragrant. Then shredded coconut, tutti-frutti, a glacé cherry pressed in at the apex. The whole cone is sealed with a clove, then dusted with edible silver vark that catches the light the way a bride's dupatta does at noon.

The Finish

Fennel seeds, cardamom, and the long exhale.

Mukhwas · Saunf · The After

The last act is mukhwas — a pinch of fennel seeds, crushed green cardamom, and silver-coated saunf scattered over the top. This is the palate cleanser built into the paan itself, the reason it has been served after meals for three thousand years. The flavour doesn't end when the cone is eaten. It lingers, evolves, and finally settles into something warm and clean.
